Toasting the Hudson Valley Food and Wine Show

On Friday, September 5th Chef Tropepe made his way to The Hudson Valley Food and Wine Show in Rhinebeck, New York to perform two cooking demonstrations based on his first cookbook, “STUFFED!” Chef Tropepe’s cookbook is the first of its kind being the only cookbook to be dedicated to the preparation and cooking of stuffed food items.

His menu proved to be a mouth watering one for any ‘foodie’. His menu from Saturday was composed of Stuffed Portobello Mushrooms with a Hummus and Cream Cheese Stuffing and Chicken Luciano, for Sunday chef pushed the culinary envelop preparing Stuffed Figs with Gorgonzola Dolce on a bed of Proscuitto di Parma, Parmesan Cheese roasted Potatoes which accompanied his roast beef stuffed with blue cheese, bacon, mushrooms and shrimp. The audience was very impressed with Chef Tropepe’s knife skills, technique, culinary knowledge and plating. Through his demonstrations chef educated as well as entertained the crowd’s questions about stuffed foods.

Chef Tropepe quickly gained fans with his Chocolate Liquor Ganache Stuffed Wontons that were being sold at his table for a local food bank. Many show goers couldn’t get enough of this Brooklyn, New York native who has proven himself to be one of the most knowledgeable minds in culinary and pastry arts and the restaurant industry.

Chef also spoke with many students from various culinary schools such as the CIA and the New England Culinary Institute and was generous with his time with everyone. Chef Tropepe comments, “Considering this was my very first show that I actively participated in I was both nervous and excited. Everything went well and according plan. I received so much support from Susan Valentine who ran the whole event and I think she is awesome and look forward to working with her for many years to come, as well as the patrons of the show. My book, food and demonstrations were very well received and so many people stopped and talked to me so it was like doing a demo for friends. I always felt that food brings people together and this is just another example of how. Thousands came to the same spot to enjoy the demos, the food and wine that was offered and enjoyed and celebrated a day of their lives with me – I am a very grateful chef.” Tropepe said.


Serving up Congratulations!

Congratulations to Chef Tropepe for being approved to the Les Amis d’Escoffier Culianres Society of New York. The society recognizes only the best 200 chefs for review and membership to their organization. Congratulations on such an amazing accomplishment!


Chef Tropepe has filmed his first culinary DVD.

The DVD is to demonstrate various cooking techniques in a form of multi media project for his certification from a Culinary Congress in Italy and will also act a press kit for chef’s cookbook, “Stuffed”.
